Arroz con Leche

This thick and creamy Mexican arroz con leche is a Spanish inspired rice pudding dessert infused with freshly ground cinnamon, cloves and vanilla. We love this easy, healthy dessert all winter long.


2 tsp ground Saigon cinnamon
1 tsp ground cloves
1 1/2 cups brown long-grain rice, soaked and rinsed
4 cups water
1 egg, beaten
8 cups whole or low fat milk
1 tbsp vanilla extract or 1 vanilla bean


1. In a saucepan, soak rice in water, 30 minutes to 1 hour. Rinse thoroughly.
2. Bring rice to a boil on high heat. Once boiling, lower heat and cook, 11-12 minutes, until water evaporates. 
3. In a bowl, add beaten eggs, milk, cinnamon, cloves and vanilla extract or ground vanilla bean. Add to rice and cook over medium-low heat, 25-35 minutes. Serve warm or cooled and enjoy!
