Mujadara: Lebanese Lentils & Rice

Mujadara is the ultimate Lebanese comfort food with basmati rice, brown lentils, zaatar spices, sumac and crispy, caramelized onions.


1 cup long-grain brown basmati rice
2 cups water
1 cup dry brown lentils
2 cups water
3 cups chopped onion
1/4 cup olive oil
2 tbsp RawSpiceBar's zaatar
2 tbsp RawSpiceBar's sumac
1 lemon, juice


1. Cook rice and lentils according to package directions.

2. In a large skillet, add vegetable oil over medium-high heat. Add onions and salt and saute,15-20 minutes until caramel brown.

3. In a large bowl, combine cooked rice, lentils and caramelized onions (save a pinch to top).  Add za'atar, sumac, black pepper and lemon juice to taste. Top with fried onions and yogurt or tzatziki and enjoy!
