Fiesta Chicken Quinoa Bowls

1 tbsp olive oil
4 chicken breasts, cubed
Kosher salt, to taste
2 tbsp RawSpiceBar's taco seasoning
1/2 cup frozen corn
1 red onions, diced
3 assorted bell peppers, diced
2 cups cooked quinoa
3/4 cup fresh salsa
1 bunch cilantro, diced

1. In a large skillet, heat olive oil over med-high heat. Pat chicken dry, add salt and taco seasoning. Add chicken to skillet and saute, 3-4 minutes. 
3. Add garlic, onion, corn and bell peppers, saute 3-4 min. Add quinoa and salsa, tossing to coat. Cook for 5 min. Mix in cilantro and remove from heat. Sprinkle with cheese if desired and serve.
