3 medium sweet potatoes, cut into ½-inch half moons

1 large red onion, sliced into ½-inch wedges

1 1-1½ pound pork tenderloin, trimmed

3 tbsp. olive oil, divided

2 Tbsp. RawSpiceBar Lebküchen Blend, divided

2 tsp. kosher salt, divided

Fresh rosemary, for garnish


  1. Preheat the oven to 425°F. 
  2. In a mixing bowl, toss together the sweet potatoes, onion, 2 tablespoons oil, 1 tablespoon Lebküchen Blend, and 1 teaspoon salt. Transfer to an oven-safe baking dish or skillet and spread into an even layer. Roast for 20 minutes. 
  3. Remove the baking dish from the oven and carefully place the pork tenderloin on top. Brush with the remaining 1 tablespoon oil, 1 tablespoon Lebküchen Blend, and 1 teaspoon salt. 
  4. Roast for another 15 to 20 minutes, until the pork registers 140°F on an instant-read thermometer and the potatoes are fork-tender. Remove from the oven and rest for at least 10 minutes before slicing and serving with fresh rosemary for garnish.
