This healthy, easy, vegan rice pudding recipe can be infused with a whole variety of freshly ground green cardamom.

Ingredients

1 cup cooked basmati white or brown rice
2 cups almond or coconut milk
1/4 cup maple syrup
1/2 cup raisins
1 tsp ground cardamom 
Strawberries to top, optional

Directions

1. In a large skillet, add rice and milk over medium heat and bring to a boil. Move heat to low and simmer, 15 minutes, until thickened. 
2. Increase heat to medium and add maple syrup, raisins, pinch salt to taste and cardamom. Cook until thickens again and rice is cooked, 15-20 minutes. Remove from heat and add toppings, as desired. Serve and enjoy!
