Vadouvan has an exquisite, smokey flavor which comes from the roasted onions and shallots. This is a delicate blend and does not hold up to long cooking times or high temperatures. Add this spice towards the end for a more pronounced flavor. Perfect for poultry, salads, seafood, and vegetable dishes.
This spice mix is wonderful for curries and tagines, but I have been sprinkling it on cauliflower florets after tossing them in oil and salt and then roasting them. Really delicious!
I had to open this the minute my package came in.. who knew you could crave curry before your coffee? It brought life to my scrambled eggs (resistance was futile).. so yummy! This is a beautiful combination with a well-rounded flavor. It pairs well with vegetable dishes as well as meats and meat substitutes. This blend is the perfect choice for those who prefer a mild curry and those who are just beginning to experiment with curries. I gave it a bit of a kick and used it for a chicken thigh rub last night, absolutely wonderful. [I high heat roast them so I massage the spice mixture into the meat, under the skin, so that the spices do not scorch and the flavor is throughout the meat.] Highly recommend this mixture whether you're experimenting with new flavors or a "seasoned" veteran ;)
