Indonesia is by far the largest clove producer in the world, providing 80% of the worlds cloves. They are tricky to harvest and must be handled manually- the buds of clove trees turn pink just before they blossom. High quality cloves have high concentrations of oil. Typically used in baking spices in the US, cloves are popular in North Africa in rice and meat dishes and pair well in bbq sauces and roasted vegetables too. These whole cloves are freshly ground in house weekly and should be replaced every 6 months.
