Chefsmartypants "Holiday Spiced-Up Blend" Chewy Ginger Cookies Recipe:

makes about 30 cookies.
2 cups all-purpose flour
2 tablespoons Raw Spice Bar Holiday Spiced-Up Blend by Chefsmartypants
2 teaspoons baking soda
3/4 teaspoon salt
1/3 cup finely chopped crystallized ginger or 1 tablespoon finely chopped fresh ginger
1 cup (packed) dark-brown sugar
1 stick unsalted butter, room temperature
1 large egg
1/4 cup molasses
Granulated, turbinado, or demerara sugar, for coating
  1. Combine first 6 ingredients in a medium bowl; whisk to blend, then fold in crystallized or fresh ginger. Using an electric mixer or a stand mixer with paddle attachment, beat brown sugar and butter in a large bowl until fluffy. Add egg and molasses and beat until blended. Add flour mixture and mix just until blended. Cover and refrigerate for 15 minutes and up to 24 hours.
  2. Preheat the oven to 350°F. Lightly butter 2 baking sheets. Spoon about ⅓ cup granulated, turbinado, or demerara sugar in a thick layer onto a small plate. Using wet hands, form dough into 1 1/4-inch balls; roll in sugar to coat completely. Place balls on prepared sheets, spacing 2 inches apart.
  3. Bake cookies until cracked on top but still soft to touch, about 12 minutes. Cool on sheets for 1 minute. Carefully transfer to racks and cool. (Can be made 5 days ahead. Store airtight at room temperature.)
