3 medium sweet potatoes, cut into ½-inch half moons
1 large red onion, sliced into ½-inch wedges
1 1-1½ pound pork tenderloin, trimmed
3 tbsp. olive oil, divided
2 Tbsp. RawSpiceBar Lebküchen Blend, divided
2 tsp. kosher salt, divided
Fresh rosemary, for garnish
- Preheat the oven to 425°F.
- In a mixing bowl, toss together the sweet potatoes, onion, 2 tablespoons oil, 1 tablespoon Lebküchen Blend, and 1 teaspoon salt. Transfer to an oven-safe baking dish or skillet and spread into an even layer. Roast for 20 minutes.
- Remove the baking dish from the oven and carefully place the pork tenderloin on top. Brush with the remaining 1 tablespoon oil, 1 tablespoon Lebküchen Blend, and 1 teaspoon salt.
- Roast for another 15 to 20 minutes, until the pork registers 140°F on an instant-read thermometer and the potatoes are fork-tender. Remove from the oven and rest for at least 10 minutes before slicing and serving with fresh rosemary for garnish.
