This easy recipe results in juicy, chicken fajitas. Bonus: everyone gets to pick their own toppings. We love this recipe for kids and adult cooks, ready in under 20 minutes.


Ingredients

1 tablespoon RawSpiceBar's taco seasoning
Kosher salt, to taste
1/4 cup water
3 tablespoons extra-virgin olive oil
1 lb whole skinless, boneless chicken breast, cut into 1/2-inch strips
1 green bell pepper, sliced
1 medium onion, sliced
2 limes, juice, plus wedges to serve
8 flour tortillas
Shredded lettuce, shredded cheese, salsa, guacamole, to serve (optional) 

Directions

  1. In a resealable plastic bag, combine taco seasoning, salt, water and 2 tablespoons of oil. Add the chicken, bell pepper and onion, seal and knead gently to coat. Refrigerate for 15 minutes.
  2. Heat the remaining 1 tablespoon of oil in a large nonstick skillet until shimmering. Empty the contents of the bag into the skillet and cook over high heat, stirring occasionally, until chicken is cooked through, 5-7 minutes. Remove from the heat and stir in the lime juice.>
  3. Transfer the chicken and vegetables to a large bowl and serve with the warmed tortillas, lime wedges and toppings. Enjoy!
