2 20-ounce cans green jackfruit in water
3/4 cup BBQ sauce
Directions
- Rinse, drain, and dry jackfruit. Chop off the center "core" portion of the fruit and discard. Place in a large bowl and set aside. Combine Memphis BBQ spices and toss to coat.
- Heat a large skillet over medium heat with oil. Once hot, add jackfruit and spices. Toss to coat and cook, 2-3 minutes. Add BBQ sauce and bit of water.
- Add BBQ sauce and bit of water. Reduce heat to medium low and cook, 30-25 minutes. Shred jackfruit as it cooks down, if desired.
- Serve jackfruit with coleslaw or avocado on buns or lettuce, with extra BBQ sauce and enjoy!
