Egyptian spices were discovered in tombs as early as 3,000 BC and were used not just for cooking but also perfumery and medicine! Cumin, coriander and cinnamon were among the most well known spices found in those early days. And so these three spices- along with toasted nuts, salt and garlic was used to create the popular spice blend we know today as dukkah. Pepper & sumac spice, now liberally used in blends for everything from fish to rice to stews, was a much later arrival, most likely with the Greeks.
