What is Chinese Five Spice Powder?

Chinese five spice powder is one of the essential base seasonings for much of Chinese cooking. While the exact origin of this blend is unknown, it is believed it is meant to incorporate all five taste elements: sweet, sour, bitter, pungent & salty. A little bit of this mix goes a long way.

What is in Chinese Five Spice Powder?

The traditional spices that go into this mix are star anise, Szechuan peppercorns, fennel, cassia, and clove. Cassia is a relative of cinnamon and slightly more bitter. Combined together, these spices create a balance of flavors, heats, and mouth sensations meant to enhance the qualities in the dish without overwhelming it.

Chinese Five Spice Powder Ingredients

Traditionally, Chinese five spice powder is made up of equal parts cinnamon, cloves, fennel, star anise, and Sichuan peppercorns. Sichuan peppercorns are not actually a true peppercorn but are a dried berry of the prickly ash tree. They have a unique aroma and flavor that is not quite as pungent as black pepper, with a slight lemony overtone.

Fennel seeds
Coriander seeds
Cassia, freshly ground cinnamon

In a dry pan over medium heat, toast star anise, Sichuan peppercorns, cloves, fennel, and coriander, 2-3 minutes, until fragrant. Let cool. Add toasted spices to a spice grinder and pulse until a fine powder is formed.
