All the Indian flavor and freshly ground Indian spices- without the oil! We love this chickpea and veggie packed, healthier version of traditional vegetable pakoras.
1 cup chickpea flour
1 tsp baking powder
1 tbsp garam masala or Madras curry powder
2 garlic cloves, minced
1 onion, diced
1 cup peas
1 large carrot, grated
2 cups vegetables of choice: peas, cauliflower, green beans
1. Preheat oven to 350F and grease a large baking sheet.
2. In a large bowl, combine all dry ingredients. Add 1 cup water (or bit more) to create a pancake batter consistency.
3. Prepare veggies and add to batter and combine. Scoop onto baking sheet. Bake, 18-20 minutes, turning halfway through. Remove from oven and serve with raita, yogurt or eat alone! Enjoy!
