Vegan Tacos Recipe - Gluten Free, Paleo, Vegan

Super flavorful soy chorizo vegan tacos made with smoky spices, diced onions, tomatoes and avocado! 


1 teaspoon vegetable oil
2 tablespoons taco seasoning
Kosher salt, to taste
1 onion, sliced
3 cloves garlic, minced
1 jalapeño chile, diced
1 12-ounce package soy chorizo, casing removed
1 16-ounce can vegetarian refried black beans
12 corn tortillas, warm


1. Heat oil in large nonstick skillet over medium heat. Add onion and jalapeño; sauté until tender, 5-6 minutes. Add spices, salt and soy chorizo and cook until beginning to brown, 4-5 minutes.
2. Meanwhile, cook beans in heavy small saucepan over low heat until heated through, stirring occasionally.
3. Warm tortillas and serve with mix of soy chorizo and beans. Top with diced tomatoes, onion, avocado or cilantro and enjoy!
