Vadouvan Roasted Cauliflower Hummus
INGREDIENTS1 head cauliflower, broken into small florets
1 clove garlic
1 tbsp RawSpiceBar's Indo-French Vadouvan
Salt and pepper, to taste
1/3 c. tahini
2 tbsp. lemon juice
2 tbsp olive oil
Lemon wedges, olive oil, & parsley for garnish
Pita bread and veggies, to serve
DIRECTIONS1. Preheat oven to 400ºF. Line a rimmed baking sheet with parchment paper or spray with oil or cooking spray.
2. Place cauliflower florets on baking sheet and toss with oil, RawSpiceBar's Indo-French Vadouvan and salt and pepper to taste. Roast for 40 minutes, turning halfway through. Remove from oven and cool.
3. Combine cauliflower, garlic, tahini, lemon juice, & olive oil in food processor or blender. Process until smooth. Add water one tablespoon at a time for a thinner consistency, if desired.
4. Drizzle with olive oil, lemon, and parsley. Serve with pita bread or veggies and enjoy!
