Sumac Lemon Orzo Salad

Ingredients

6 cups of whole wheat orzo
6 small Persian cucumbers, diced
3 ripe red vine tomatos, diced
1 can of garbanzo beans
Juice & zest, 1 lemon
1 bunch mint, chopped
1 tbsp RawSpiceBar's Sumac
2 tbsp extra virgin olive oil
1 1/2 cups feta
Salt and pepper, to taste

Directions

  1. Cook orzo until al dente. Drain and rinse with cold water.
  2. Toss tomatoes, chickpeas and cucumber with orzo.
  3. Stir in lemon juice, mint, RawSpiceBar's Sumac and olive oil. Crumble feta over salad and toss until well mixed. Salt & pepper to taste.  Serve and enjoy!
