Freshly ground spices and raisins, simmered, form the flavor base of this easy, moist spice cake– the smell fills the whole kitchen!
2 cups raisins
2 cups sugar
2 cups water
¾ cup butter
1 tbsp RawSpiceBar's freshly ground cinnamon or cinnamon sticks
1 tsp RawSpiceBar's whole cloves or freshly ground cloves
3 cups flour
2 tsp baking powder
2 tsp baking soda
2 eggs beaten
3/4 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla
1. In sauce pan, add raisins, sugar, water, butter, cinnamon, and cloves and bring to a boil. Remove from heat once boiling and cool completely, about 1 hour.2. Transfer to large mixing bowl. Preheat oven to 350ºF. Grease 9x12 cake pan.3. In medium bowl, mix flour, baking powder, and baking soda.
4. Beat eggs and add to spice mix. Add flour in batches, until just combined. Pour batter to pan.
5. Bake, 50-60 minutes until cooked in center.
6. For glaze, mix powdered sugar, milk, and vanilla in small bowl. Drizzle over cooled cake and serve!
