Sous Vide Potatoes

This basic technique for sous vide potatoes helps them retain their rooty, woodsy goodness that can get lost from traditional cooking. Add any variety of spices like vadouvan, garam masala, Italian seasoning, Greek seasoning or herbes de provence to mix it up before you sous vide.  Pan fry potatoes in a skillet for 3-4 minutes to finish or mash up with a bit of butter. 


1 tbsp RawSpiceBar's thyme, herbes de provence, Greek seasoning, Italian seasoning or any other spices or freshly ground spice blends
4 Yukon gold potatoes
Olive oil
Kosher salt and pepper, to taste


1. Add potatoes to sealed bag in a single layer with pepper, salt, garlic, olive oil, and freshly ground spices.  
2. Turn on sous vide to 195 degrees F, for about 60 minutes. Serve as is or pan fry for a little crispiness. You can also add these to a braise or stew or mash them up with cream and butter. Enjoy!
