Smoky Beans and Polenta

1 tbsp vegetable oil
1 onion, diced
1 16 oz can kidney beans
1 tablespoon tomato paste
1 tablespoon maple syrup
2 teaspoons soy sauce
1 teaspoon Bourbon smoked paprika
Polenta, scallions, to serve

1. Heat a medium pot with oil over medium heat. Add onions and cook, 4-5 minutes. 
2. Add garlic, tomato paste, beans, soy sauce, maple syrup and smoked paprika. Reduce heat to low and cook through, 8-10 minutes. Add a splash of water if too thick.
3. Divide the polenta into four bowls and top with the smoky beans, chopped scallion greens, and a grind or two of black pepper. Enjoy!
