An easy South Indian dish, this sambar recipe is ready in under 30 minutes and spiked with freshly ground Indian spices and flavorful, tender dal. Serve with steamed white or brown rice or naan, plus yogurt. Best of all, mix and match whichever veggies you have on hand.
1. Soak dal in hot water for 20 minutes. Blanch vegetables in hot water and pressure cook both.
2. In a skillet, add oil over medium high heat and add onions, salt and spices and saute, 5-7 minutes.
3. Once dal is cooked, mash well and season to taste. Bring to a boil and reduce heat to simmer, 10-15 minutes until sambar thickens. Top with coriander, yogurt and rice and enjoy!
