Preheat oven to 425F. In a large bowl, combine breadcrumbs, onion, Italian Seasoning, parmesan, garlic, salt, scallions and stir to combine. Add beaten eggs and salmon and combine gently.

Scoop into patties about 1/2" thick.
Drizzle oil over tray and place patties on tray, spray with cooking oil.
Bake 15 minutes, flip, spray surface with cooking spray, bake 5 minutes.
Serve with yoghurt, cauliflower rice, brown rice or quinoa and any sides of steamed veggies, and enjoy!
