Easy, Juicy Rotisserie Chicken

This recipe includes brining the chicken, which is an extra step but super addicting and worth it. Enjoy this easy recipe!



12 cups chicken brine
5-6 lb whole chicken
4-5 tablespoons butter softened
2 tablespoons rotisserie chicken seasoning

Kosher salt to taste


1. Preheat the oven to 400 degrees F. Brine the chicken, then rinse and pat dry with paper towels.
2. Tie the chicken legs together with kitchen twine.
3. Place the butter, rotisserie chicken seasoning and pepper in a bowl. Stir to combine.
4. Loosen the skin of the chicken breast. Rub the butter mixture all over the chicken, both on the outside of the chicken and underneath the skin.
5. Place the chicken in a roasting pan. Cook for 1 hour and 30 minutes or until a thermometer inserted into the thickest part of the thigh registers 165 degrees F.
6. Make sure to baste the chicken with pan juices every 20 minutes.
7. Remove from oven and let rest, 10-15 minutes, before carving. Serve with pan drippings.
