Pumpkin Pie Spice Apple Crepes
For Filling1 tsp RawSpiceBar’s Pumpkin Pie Spice
3 large apples, chopped & cubed
3 tbsp brown sugar
For Crepes1 c. all-purpose flour
1/2 c. milk
1/2 c. water
1/4 tsp salt
2 tbsp butter, melted
For Filling1. Combine cubed apples, brown sugar and RawSpiceBar’s Pumpkin Pie Spice. Let sit, about 20-30 minutes.
For Crepes1. Whisk flour and eggs together in a large mixing bowl. Add in milk and water gradually, stirring to combine. Add salt and butter and beat until smooth.
2. Heat an oiled frying pan over medium-high heat. Scoop 1/4 cup of the batter onto the pan and tilt the pan with a circular motion. This should coat the surface of the pan evenly with batter.
3. Cook for 2 minutes, until the bottom is light brown. Loosen with a spatular, turn, and cook the other side. Repeat until all the batter has been used.
4. Pile apple mixture into individual crepes and serve and enjoy!
