1 cup fresh orange juice
1⁄3 cup fresh lime juice
1⁄4 cup fresh grapefruit juice
RawSpiceBar’s Achiote Paste
1 (3–4-lb.) whole chicken, cut into 8 pieces
Warm tortillas and red onions, for serving
Kosher salt, to taste
- Combine juices, achiote paste using RawSpiceBar’s Achiote Paste, and salt in a blender, and purée until smooth, at least 2 minutes. Set aside.
- Add chicken pieces to Dutch Oven and pour over sauce. Place pot over medium-high heat, and bring sauce inside to a boil; reduce heat to medium-low, and cook, covered, until chicken is cooked through, about 45 minutes.
- To serve, uncover pot and divide chicken among serving bowls and serve with sauce, plus onions and tortillas, if desired. Enjoy!
