Pinto Beans Mexican

One pot, flavorful, smoky, Mexican pinto peans- perfect for burritos, veggie burgers, tacos or alone!

Ingredients

1 lb pinto beans, soaked overnight
1 tbsp olive oil
1/2 white onion, diced
3 garlic cloves, minced
1 cup vegetable broth
1 chipotle pepper in adobo sauce
1/2 cup diced tomatoes
2 tbsp chili powder or taco seasoning
1/4 tsp ground cinnamon
Kosher salt and pepper, to taste

Directions

1. Heat large pot or cast iron over medium heat. Once hot, add oil, salt and onion and saute, 5-6 minutes. Add garlic and chili powder and saute, 2-3 minutes. Add chipotle pepper, beans and tomatoes and sauté, 3-4 minutes.
2. Add vegetable broth and cover with water, about 1-2 inches and bring to a boil. Reduce heat to low and simmer, 50-60 minutes, until beans are tender. 
3. Add cinnamon, more adobo, salt, pepper to taste and cook on low another 10-15 minutes. Enjoy and use in veggie burgers, tacos, burritos, or wherever you'd like!
