Peas Pulao

Easy, one pot peas pulao, packed with freshly ground Indian spices, chiles, garlic and onions. Swap for any veggies on hand or double the spices if you don't have chiles. Enjoy!

Ingredients

2 tbsp vegetable oil
4 fresh green or red chiles, diced
2 onions, minced
3 cloves garlic, minced
2 cups basmati rice
1 cup green peas
1 tbsp Madras curry powder, garam masala or roasted ground cumin
5 cups water
Kosher salt and pepper, to taste

Directions

1. In a medium skillet, add oil over medium-high heat. Add onions and saute, 5-7 minutes. Add spices, chiles, garlic and saute, another 2-3 minutes. 
2. Add rice and cook until browning, another 3-5 minutes. Add peas and cook another 2-3 minutes.  Add water and pinch salt and bring to a boil on low, for 10-12 minutes. Enjoy!
