Panko Parmesan Italian Baked Salmon


4 6 oz salmon fillets
1/3 cup Dijon mustard
2 cups panko
1 bunch fresh chopped parsley

2 tbsp RawSpiceBar's Italian seasoning
2 tablespoons olive oil
1 lemon, zest
Kosher salt, to taste

1. Preheat oven to 425 degrees and line baking pan with foil. In small bowl, combine panko, parsley, olive oil, lemon zest, Italian seasoning salt and pepper. 
2. Place salmon on foil and brush dijon on fillets liberally. Top with heaping panko mix and press down slightly.
3. Bake, 12-15 minutes until cooked through. Serve with lemon wedges and a side of asparagus, broccoli, brown rice or quinoa. Enjoy!
