Oven Fried Potatoes

Simple, delicious golden, crispy roasted red potatoes, tossed in high quality smoked paprika, plenty of salt, olive oil and garlic.


3 pounds small red potatoes
1/4 cup olive oil 1 tbsp smoked paprika or smoked chicken rub
Kosher salt and pepper, to taste 5 garlic cloves, minced 1 bunch parsley, chopped


1. Preheat the oven to 400 degrees F. Quarter potatoes and add to bowl with olive oil, salt, pepper, paprika and garlic and toss to coat.
2. Transfer to sheet pan in one layer and roast, 45 minutes to 1 hour, until golden, flipping halfway through. 
3. Remove from oven and toss with parsley. Season to taste and enjoy!
