Nikujaga: The Ultimate Japanese Comfort Food

Nikujaga is a hearty Japanese meat and potato stew, with warming spices. It is frequently eaten during the colder winter months and is often eaten with a bowl of hot steamed rice.


3 cups snow peas, cooked
4 red potatoes, diced
2 white onions, diced
3 carrots, diced
Vegetable oil
1 lb beef for stew, cubed
2 cups water
4 tbsp soy sauce
2 tbsp sake
1 tbsp RawSpiceBar's Japanese Curry Powder
1 tbsp RawSpiceBar's Shichimi Togarashi (optional)
Kosher salt & pepper, to taste


1. In a large stockpot, heat oil over medium-high heat. Add onions and salt and cook until translucent, 4-5 minutes. Add beef and cook until browned on all sides, about 5-7 minutes.
2. Add Japanese curry powder, potatoes and carrots and cook until browned, 3-4 minutes.
3. Add water, soy sauce, mirin and sake cover, and cook over medium heat, 35-40 minutes until potatoes are tender and flavors are combined. Add snow peas and serve with shichimi togarashi. Enjoy!
