Mexican Cauliflower Rice

A healthy alternative to Mexican rice for taco Tuesday, swap in this hugely flavorful cauliflower rice, spiked with Mexican spices.

Ingredients

1 tbsp taco seasoning (or 1 tbsp chili powder plus 1/2 tbsp Mexican oregano plus 1/2 tbsp smoked paprika
1 head of cauliflower, diced into 1 inch pieces and pulsed in food processor.
1 tbsp vegetable oil 
1 onion, diced
3 cloves garlic, minced
Kosher salt and pepper, to taste
2 tbsp tomato paste
1/2 cup chicken or vegetable broth
Bunch cilantro for garnish (optional)

Directions

1. In a large skillet over medium heat, add onion and saute, 5-7 minutes. Add onion, salt and spices and saute, another 2-3 minutes. Add cauliflower, tomato paste and stir, 2-3 minutes.
2. Add broth and move heat to medium high. Cook until liquid dissolves. Garnish with cilantro, hot sauce, salt and pepper and enjoy!
