RawSpiceBar’s Memphis Dry Rib Rub
2 tbsp vegetable oil
4 portobello mushrooms
1 shallot, minced
2 garlic cloves, minced
1 tbsp salt, to taste
1/3 cup BBQ sauce
- In a small bowl, combine vegetable oil, salt, shallot, garlic, and RawSpiceBar’s Memphis Dry Rib Rub. Generously brush mixture onto both sides of the portobello mushrooms. Set mushrooms aside in the fridge for at least 30 minutes or up to 4 hours until ready to grill.
- Preheat an outdoor grill or grill pan to high heat. Brush mushrooms with BBQ sauce. Grill mushrooms for about 5 minutes per side, brushing with additional BBQ sauce in between, or until well-marked by the grill grates.
- Top with roasted onion, tomatoes, roasted red peppers, cheese, or toppings of choice on a toasted bun and enjoy!
