Malpuas are an Indian pancake with freshly ground green cardamom or other Indian spices infused into the milky batter.
2 1/2 cups milk
1/3 cup flour
1/3 cup sugar
1/3 cup water, as needed
2 tsp RawSpiceBar's green cardamom seeds or ground cardamom
2 tbsp coconut oil
2 tbsp pistachios, sliced
1. In large saucepan, add milk over medium high heat and bring to a boil, until reduced to about 1 cup. Add ground cardamom and combine.
2. In a medium bowl, combine flour, sugar, 1/3 cardamom milk and 1/3 water to get to a pancake batter consistency.
3. Heat skillet over medium heat and grease. Pour 2 tbsp batter into skillet into 2-3 inch pancakes and cook to golden brown, 1-2 minutes per side. Serve and enjoy with pistachios and remaining cardamom milk!
