Japanese Burgers - Spiced 4 Ways - Gluten Free, Paleo, Keto
Inspired by chef Tadashi Ono, via the New York Times. Pair this half beef, half pork, shichimi togarashi spiced burger with rose or beer for the perfect summer dinner.
1/2 cup panko
1/4 cup milk
8 ounces ground sirloin
8 ounces ground pork
1/2 onion, finely diced
1 1/2 tsp soy sauce
Kosher salt, to taste
Brioche buns, to serve
1. Prepare a grill over medium heat. In a large mixing bowl, combine panko and milk and let rest, 3-4 minutes. Combine sirloin, pork, onion, soy sauce, salt and spices. Knead the meat to combine and divide into 4 parts.
2. Dab hands with sesame oil and roll each part into a ball, then pat flat into 1/2 inch patties.
3. Grill burgers, about 4-5 minutes per side, until cooked through. Serve on brioche buns and enjoy!
