2 tsp Kosher salt
2 tbsp vegetable oil
1 1/2 lbs pork shoulder
2 cups chicken broth, unsalted
1 onion, quartered
4 cloves garlic
1. In a small bowl, combine salt and spices. Pat pork roast dry and liberally rub with oil. Season with the salty spice rub. Select the Sauté button to heat the Instant Pot. When “Hot” is displayed, add oil.
2. Once hot, add pork roast and sear on all sides, approximately 4 minutes per side. Press Cancel and remove roast from the Instant Pot. Set aside.
3. Add broth to pot and place trivet in the bottom. Lay roast on top of the trivet and add onions and garlic. Cover pot, lock on the lid, and set the steam release valve to Sealing. Select the Pressure Cook button and set the cook time to 30 minutes, then quick release.
4. If desired, to crisp the crust, preheat oven to 425˚ F while the roast is resting and roast for 10 minutes. Move the pork to a cutting board and carve into slices. Enjoy!
