Instant Pot Dal - Easy, Healthy

1 tbsp vegetable oil
1 large onion, diced
2 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tbsp tomato paste
2 tbsp RawSpiceBar's garam masala
4 c. vegetable broth
1 15 oz. can coconut milk
1 pound green lentils
3 cups vegetables of choice
Salt & pepper, to taste
1. Put the instant pot on saute and heat the oil in it. Add spices, garlic and salt until fragrant, about 3-4 minutes. Add onions and let brown, another 4-5 minutes. Add tomato, another 3-4 minutes. Add the dal and water and combine.
2. Change the instant pot setting to manual or pressure cook mode at high pressure for for 5 mins. After the instant pot beeps, let the pressure release naturally for 5 minutes, then release the pressure.
3. Garnish with cilantro and top with lime juice. Serve and enjoy!
