Instant Pot Chicken and Rice - Greek Style

This Instant Pot Chicken and Rice is ready in under 20 minutes and super healthy with boneless chicken breasts, RawSpiceBar's Greek seasoning and brown basmati rice. 

Ingredients

4 boneless chicken breasts or bone-in breasts and thighs
1 bunch cilantro, chopped
1 cup water
1 tbsp vegetable oil
1 small diced onion
2 cloves garlic
1 cup brown basmati rice
2 carrots, diced
2 stalks celery, diced
1 red bell pepper, diced
Kosher salt and pepper, to taste
1 tbsp RawSpiceBar's Greek Seasoning

Instant Pot Directions

1. Pat chicken breasts dry and season with salt and pepper. Turn Instant Pot to "sauté" and add oil. Once hot, add onion and saute, 3-4 minutes. 
2. Add chopped vegetables, salt to taste, garlic and Greek seasoning and saute, 2-3 minutes. Deglaze pan with splash of water.
3. Add rice, cilantro and broth and close lid. Set to 8 minutes for breasts and 20 minutes for bone in chicken. Once finished, let release manually, about 15-20 minutes for brown rice. 
4. Open and remove chicken, using two forks to shred. Mix to combine and serve!
