1 1/2 tbsp RawSpicebar's Greek Seasoning
Juice from 1 lemon
3/4 cup cooked quinoa
4 skinless, boneless chicken breasts
1/4 cup Dijon mustard
Olive oil cooking spray
- Preheat oven to 300º F. Position a rack in the center of the oven. Spread quinoa on a parchment-lined baking sheet and bake until lightly toasted, 25 to 30 minutes. Let cool, then transfer to a bowl.
- Increase oven temperature to 425º F. In a large bowl, combine chicken, Dijon mustard, lemon juice, RawSpicebar's Greek Seasoning, salt, and pepper, to taste. Coat well, then dip chicken in quinoa on both sides. Move chicken to baking sheet, spritz with cooking spray, and place in oven.
- Bake until just cooked through, 15 to 20 minutes, serve & enjoy!
