Fritada (Ecuadorian Spiced Pork)

This dish, called fritada de chancho, is a popular Ecuadorian dish of slow cooked pork with orange juice, onion, garlic and spices. 


3 lbs pork 
1 tbsp roasted ground cumin
1 tbsp chili powder
8 garlic cloves, minced
1 onion, minced
1 shallot, minced
3 cups water
1 cup orange juice
Kosher salt and pepper, to taste


1. Season pork with chili powder, cumin, garlic, salt and pepper. Marinate in refrigerator, 2 hours or overnight.
2. In a large skillet, add oil over medium-high heat. Add pork until browned on all sides, 8-10 minutes. Add onion and saute, 4-5 minutes. Add shallots, garlic, salt and pepper and saute, another 2-3 minutes. 
3. Add 3 cups of water and cook on medium heat until the water is almost gone. Add the orange juice and let it reduce
4. Add yuca, hominy or beans to same pan and let cook, 10-15 minutes on medium-low heat. Serve and enjoy!
