Oven Fried Eggplant

Healthy, oven fried eggplant, spiked with freshly ground Italian seasoning and baked to a golden crispy brown. Switch up the flavors and try with other spices- like greek seasoning or herbes de provence.


2 eggplants
2 egg whites (beaten)
3⁄4 cup breadcrumbs
2 tbsp Italian seasoning or herbes de Provence
1⁄2 cup parmesan cheese
2 cloves garlic, minced
Salt & pepper, to taste
2-3 tbsp olive oil


1. Preheat oven to 400 F. Line a baking sheet with parchment paper. Combine Italian seasoning, bread crumbs, parmesan cheese, salt, pepper, and garlic together.
2. Slice eggplant in 1/4" slices. Salt and let "sweat", 30 minutes. Remove moisture.
3. Dip eggplant in beaten egg whites and then crumb mixture and add to baking sheet and drizzle with olive oil.
4. Bake in a 400 degree oven for about 15 minutes, until done.
