Servings: 4-5 people
2 medium sweet potatoes, peeled, about 1 lb (from Imperfect Produce)
2 eggs, beaten
2 medium carrots, peeled (from Imperfect Produce)
1/2 cup green scallions, diced
Vegetable oil, for cooking
1/3 cup flour (quinoa, wheat, brown rice)
Kosher salt, to taste
- Grate sweet potatoes and carrots using a grater. Place in a medium bowl and combine with , salt, flour, scallions and eggs. Stir the mixture together with a spatula or wooden spoon until combined.
- Add 2 – 3 tbsp of oil into a large skillet over medium-high heat. Once the oil is hot, form small patties out of the sweet potato mixture in your hands.
- Cook fritters until golden brown, about 2 – 3 minutes, then flip cook an additional 2 minutes. Transfer the fritters to a cooling rack.
- Repeat this process with the remaining mixture. Serve warm and enjoy!
