Chicken Parmesan

2 skinless, boneless chicken breasts, halved
1 tbsp RawSpiceBar's Italian seasoning
Kosher salt, to taste
2 eggs
1 cup panko 
1/2 cup grated Parmesan cheese
2 tablespoons all-purpose flour
1/2 cup olive oil 
1 cup prepared tomato sauce
1/4 cup fresh mozzarella
1 bunch fresh basil
1/2 cup grated provolone cheese
1/4 cup grated Parmesan cheese


1. Preheat an oven to 450 degrees F. Wrap chicken in plastic bags and pound to 1/2" thick. Season with salt and pepper.
2. Beat eggs in a shallow bowl and set aside. Combine italian seasoning, salt to taste, panko and 1/2 cup Parmesan cheese in a separate bowl, set aside.
3. Dip chicken in eggs and then panko mix and set aside.
4. Heat oil in skillet on medium high heat. Once hot, add chicken, 2 minutes per side.
5. Move chicken to baking dish and layer in tomato sauce, mozzarella and basil. Sprinkle with Parmesan cheese.
6. Bake in oven until brown and bubbly and chicken is cooked through, 15-20 minutes.
