Easy Curry Sauce, British Style

The secret to ultra flavorful chicken tikka masala & other curries? Homemade curry sauce with freshly ground garam masala, fresh ginger, garlic and chiles. This healthy, homemade curry sauce is ready in under 20 minutes. Make a big batch and refrigerate or freeze and pair with lentils, loads of veggies, chicken or beef for a  or your favorite meat.

2 tbsp vegetable oil
1 onion, diced
3 cloves garlic, minced
1 inch ginger, minced
1 tbsp tomato paste
1 tbsp all purpose flour
1 1/4 cup water or broth
1/4 cup coconut milk (optional)
1 lemon, juice
Kosher salt & pepper, to taste


1. Heat vegetable oil in a skillet over medium high heat. Add onion and let simmer, 4-5 minutes. Add garam masala, garlic, ginger and salt and stir until fragrant, 2-3 minutes.
2. Reduce heat to medium and add tomato paste, 3-4 minutes, then add flour and combine thoroughly, 2-3 minutes. Add water or broth, lemon juice and coconut milk and let mixture begin to thicken. Remove from heat.
3. Serve as is or run through a food processor and blender to get a smooth sauce. This curry sauce can be stored for up to a week in the refrigerator and can be used to make a ton of different curries- just add your vegetables or meats.
