Curry Frittata

2 sweet potatoes, sliced
1 tbsp vegetable oil
2 cups spinach
1/2 onion, diced
2 garlic cloves, minced
1 inch ginger, diced
6 large eggs
1 tablespoon RawSpiceBar's Madras curry powder
Scallions, goat cheese, to top, optional

Preheat oven to 400 degrees. Line a baking tray with parchment paper.
Place sliced sweet potato on tray with olive oil and kosher salt. Roast, 20-25 minutes until soft.
In skillet, steam spinach with water, 1 minute. Set aside and drain.
Add oil to skillet over medium-high heat. Once hot, add the onion and saute for 5 minutes. Add garlic, curry powder, ginger and saute, 1-2 minutes.
In a  bowl whisk the eggs.
Layer sweet potatoes, spinach, onion then eggs in casserole. Bake, 10-15 minutes until cooked. 
Put the pan into the oven under the broiler and let it finish cooking for 2-3 minutes, or until it has puffed up and no longer runny. Serve with scallions and goat cheese, if desired, and enjoy!
