There is no better, easier treat than this healthy cinnamon popcorn. We've amped up the cinnamon spices and swapped coconut oil for the buttter and sugar. This recipe is amazingly delicious, and super addictive!
1. Preheat oven to 250 degrees F. Pop popcorn according to package directions.
2. In a small saucepan, melt butter over medium heat. Add sugar, cinnamon, salt to taste, and vanilla, and cook until thickened.
3. In a large bowl, combine popcorn and cinnamon mixture and coat evenly. Move popcorn to a large baking pan and bake in oven, 10 minutes. Turn oven off and let sit in oven, another 15 minutes. Cool and enjoy!
