Chocolate Banana Chai Muffins

2 tsp RawSpiceBar’s Peppercorn Chai
3 tbsp vegetable oil
2 eggs
1/4 cup sugar
3 mashed bananas
2 cups chocolate chips
1/2 cup unsweetened almond milk
1 tsp vanilla extract
1 3/4 cup all purpose flour
1 tsp baking powder
1/4 tsp salt


  1. Preheat the oven to 375 degrees. Line a muffin tin with liners or spray them with non-stick spray (muffins will stick to the liners) and set aside.
  2. In a small saucepan, add the almond milk, bring to a simmer, then remove from heat.
  3. In a large bowl, whisk together the eggs, vegetable oil, mashed bananas, sugar, and vanilla. Add RawSpiceBar’s Peppercorn Chai along with the flour, baking powder, and salt. Mix everything together until well incorporated.
  4. Divide your batter evenly among your prepared muffin tin and bake for about 20 minutes or until fully cooked through.
