Cardamom Summer Banana Coconut Pancakes

INGREDIENTS

1 cup whole wheat flour
2 tsp baking powder
1 tsp RawSpiceBar's Cardamom Summer
Pinch sea salt
2 ripe bananas, mashed
1 egg, slightly beaten
½ cup coconut milk
1 tsp vanilla extract
Coconut oil
Toasted coconut, banana, syrup, to top, optional

DIRECTIONS

  1. In a mixing bowl, whisk flour, baking powder, RawSpiceBar's Cardamom Summer spices and salt. Make a well in the center of the dry ingredients and add in the mashed banana, egg, vanilla, and milk. Whisk wet ingredients and fold the dry ingredients until combined.
  2. Melt enough coconut oil to coat a medium saucepan over medium heat. Scoop heap of batter in and cook, 2-3 minutes or until the top is bubbly. Flip, cooking for another 2-3 minutes and repeat with remaining.
  3. Serve warm and top as desired!
