Bombay Aloo

One of the most popular home cooked potato recipes, with freshly ground Indian spices, goes with pretty much everything.  


4 potatoes, boiled and diced
1 inch ginger, minced
3 garlic cloves, minced
3 tomatoes, quartered, 1 tomato, wedged
Vegetable oil
1 large onion, diced
1 tsp chaat masala, optional
1 tbsp garam masala
1 tsp chili powder
Bunch coriander leaves, minced, optional

Kosher salt, to taste


1. In a food processor or blender, combine ginger, garlic and 3 tomatoes in a paste until smooth.
2. In a large skillet, add oil over medium high heat. Add onion and cook until translucent, 5-7 minutes. Add garam masala, chili powder, salt and garlic paste and saute, 4-6 minutes.
3. Add the tomato wedges, stir well and cook, 3-4 minutes. Add potatoes and cook, another 4-5 minutes. Season to taste and serve with chaat masala, coriander and yogurt. Enjoy!
