2 tablespoon RawSpiceBar's Cajun Blackened Seasoning
Kosher salt, to taste
4 6 oz salmon, fillets
4 tablespoons canola oil
2 lemons, zest and juice
Brown rice, quinoa, steamed veggies like broccoli, asparagus, zucchini, to serve
1. In a small bowl, combine blackened seasoning, oil and salt. Pat salmon dry and liberally season flesh side only with marinade. Let marinade, 20 minutes, up to 1 hour.
2. Heat a large heavy-bottomed pan or cast iron skillet over medium heat, and add the oil. When the oil begins to smoke, shut off heat. Add salmon, in a single layer, flesh side down. Turn the heat back on under the pan and cook for 2 to 3 minutes. 3. Flip and cook the salmon over medium heat, another 5 to 6 minutes.
4. Top with lemon zest and juice and serve with quinoa, brown rice, succotash, steamed veggies like asparagus or broccoli.
