One of our favorite easy, weeknight baked cod recipes. Prepared Greek style with Greek Seasoning, panko, lemon, garlic and parsley. Bakes in 15 minutes!

Ingredients

1.5 lb cod, 3-4 fillets
5 garlic cloves, minced
1/4 cup chopped parsley leaves
2 lemons, juice and zest
5 tbsp olive oil
2 tbsp melted butter
1/3 cup panko
2 tbsp RawSpiceBar's greek seasoning
Kosher salt, to taste
 
Instructions

  1. Preheat oven to 400 degrees F. Combine lemon juice, zest, garlic, olive oil, and melted butter in a shallow bowl. Set aside.
  2. In another shallow bowl, mix panko, salt and greek seasoning. Set next to the lemon juice mixture.
  3. Pat fish fillet dry. Dip fish in the lemon juice mixture then dip in the panko mixture. Shake off excess.
  4. Heat 2 tbsp olive oil in a cast iron skillet over medium-high heat. Add fish and sear on each side - don't cook through - about 1-2 minutes.
  5. Drizzle remaining lemon juice over the fish fillets.
  6. Bake in the heated oven for until it begins to flake easily with a fork, 8-12 minutes.
